Honey Wheat Pancakes with Honey Butter Syrup are a healthy way to start your day. Made with coconut oil, honey and wheat flour. No refined sugar!
1 1/2 cups whole wheat white flour
1/2 tablespoon baking powder
3/4 teaspoon salt
1 teaspoon baking soda
2 eggs, beaten
1 1/2 cups buttermilk
3 tablespoons melted coconut oil
3 tablespoons Indian River Natural Raw Honey

Honey Butter Syrup:
1 stick butter, melted
1/4 cup Indian River Natural Raw Honey
1 tablespoon half and half
1/4 teaspoon cinnamon

In a large bowl, combine the flour, baking powder, salt and baking soda. Set aside.

In a small bowl, combine the eggs, buttermilk, coconut oil and honey. Add this mixture to the dry ingredients and mix it until it is smooth. Fry the pancakes on a hot, lightly greased skillet, baking each side for 2-3 minutes, or until the pancake is cooked through.

For the syrup, combine the melted butter, honey, half and half and cinnamon in a small bowl. Mix well right before serving on top of the pancakes.
